Look up "thatching", "waddle and daub" "adobe"

 

Perhaps, instead of cleats and thatch, a straw bale construction type of exo-construction, you could do essentially an elevated concrete sidewalk around the house and essentially just stack straw bales then mud them, some type of additional framing in there and tied back to the main structure occasionally.

I would have to order a sample of wool, Rockwell, straw, and rammed Earth, and then check to see if I have a reaction to them.

Verify which ones are actually safe.

Thatched roofs are common in Denmark, last a long time too.

The cheapest way to do adobe exterior finish, with your hardwood interior, would probably be thatched straw wall insulation, and add a cheap hanger similar like this one to add vertical load strength for the adobe.

Simplest is formaldyhyde-free fiberglass(interior insulation)

I found a few companies can build rammed earth/adobe in quebec, im 100% going to do that.

Why do i need insolation if its adobe and why do i need vertical load strength?

Canada is much colder than Arizona, per energy code you'd need a 5 foot thick wall(per cursory Google search)

So the adobe will last💪. It will have some weight to it and slowly break and slide down, pulling on the thatching's weaker attachment. A light gauge wire mesh/fencing(called lathe) screwed over the thatching might be a better idea. I suppose you could use jute/hemp if you're opposed to the metal, maybe some white oak pegs.

Where you build your house may be more important than how you build it. And the root cause if your sensitivities could likely be a deuterium imbalance, so you may want to try drinking DDW (deuterium depleted water) as a quick hack to provide some relief.

If you're hiring it out, slate might be a similar price and 1,000x better, especially if you find some used. I was just showing that it is used customarily and successfully in Denmark. Metal would be a lot cheaper, like your original plan.
