Why shouldn't you fry vegetables?

Kills vitamins and enzymes. Some veggies are more resistant to that than other + frying on oil is dangerous and unhealthy regardless on what you fry. 

Fun fact: Frying tomatoes turns them so acidic that they break down some of the pan surface which you then consume -> this may lead to Alzheimer's development.

Yeah well raw is always best. Nature has always provided perfection for us. No need to manipulate it but we do anyway cause ti seems like it makes things easier but it actually complicates it in the long run. Ceramic cookware prevents the tomato thing. You don't want Teflon/aluminum that's where its very bad.

Hope this helps, if anything steaming is best. Pressure cooker also another good cooking method fast/short and minimal escape of goodness.

Frying food doesn't make it unhealthy. It may add some oil to it, but that's not the same thing. There's no way to measure "healthy" in a way that lets you compare two foods.

Some foods can't be eaten raw. Some gain nutrients from cooking. It's not that simple.

If you burn a lot of calories, for example by riding 100 km on a bicycle, then french fries can't do you harm, only good.

When you don't need these additional calories, then I would say stay away, there's no more benefit in frying than extra energy and taste, but there are some serious downsides, like creation of toxic side-products.
