Whats the best way to eat vegetables besides the soup?

There is no definite answer to that but here are some useful tips for you

  • adding a bit of fat (olive oil, ground seeds, nuts, tahini...) on the top ensures that fat-soluable vitamins (A,D,E,K) are properly digested and stored by the liver. 
  • add herbs such as oregano, basil, corriandet, thyme or one of those mixed herbs spices to boost flavout and antioxidant properties
  • you can stir-fry the veggies for a little while to help break down the cellular wall, although this may kill a little bit of enzymes and vitamins
  • play around with sauces. Blend couple ingredients together and see what you come up with, make sure to combine sweet, salty, sour and something to "carry the taste" like tahini or mustard. popular ingredients (figs, dates, vinegar, lemon, tahini, miso, mustard, olive oil, salt, red peppers, garlic, onion) 
  • squeeze a bit of lemon on top to protect from oxidation while stored in fridge and to help with Iron absorbtion
  • avoid adding fast-digested fruits like mangos or mellons with your veggies because these require little time to digest and will have to "sit and wait" in your stomach till the veggies are mixed&churned up leading to bloating and fermentation. Same reason one sould never eat high source of protein with a fruit or high source of carb. 

Cool tip

When eating broccoli, pre-chop it first and let it the pieces sit together for 30 minutes before steaming or cooking. The damage to the plant will ensure that an enzyme myrosinase will combine with glucosinolates in the plant to create Sulphorophane, a powerful compound that has anticancer properties and is the main reason why broccoli is considered a superfood. This stuff actually helps prevent a toxic damage from a polluted environment. Once this is created, it will not be destroyed by cooking. Cooking the broccoli as a whole will kill the myrosinase so the reaction cannot take place.

If you make similar type of dressing like the video below, any salad/vegetables will be demolished even by the kids. Raw is always best but for harder vegetables, Steaming is probably the healthiest although there's nothing wrong with boiling or baking some tubers from time to time.

TIP: Buy a ceramic coated quality pressure cooker. If you cook a lot this will make life so much easier and you don't have to worry about checking every 10 minutes or so as meals are preset and keeps warm and everything locked in and will rarely take longer than 15 minutes to complete cooking with a pressure cooker and its also one of the best methods for preserving nutrients within the food that are lost using other conventional methods.

A heavy cast iron skillet with a lid works good as well for long lasting heat then after you done cooking hardier stuff like grains, legumes ect.. you can just steam vegetables on top as the pot is very heavy and thick it will keep the heat warm for a while.
