Eat bigger meals more often. You can eat all the vegetables you shovel into your face and not become overweight because fiber. If your friends are not astounded by the size of your salads, make them bigger.
Eat whole oily foods like avocado and nuts. Also whole grains and legumes (like beans and lentils).

I am glad you are feeling better. It's hard to tell which diet change improved your health because there are so many variables.

I eat a Whole-Food Plant-Based (WFPB) diet for health. It lowed my cholesterol from good to excellent. Otherwise I have not noticed a difference because I was already healthy. For me, it's more of a long-term investment for better health later in life.
Not all vegetarian or vegan diets are healthy. WFPB is the healthiest, and science backs up that claim.

The digestive system is interesting, but it doesn't prove what the healthiest diet is.
For example, maybe we did not evolve to eat legumes, and not designed to digest legumes.
Perhaps legumes are the healthiest by accident, despite our digestive system.
The evidence shows legumes are the healthiest, so lets take advantage of that.
The long life in Blue Zone is compelling. Blue Zones eat legumes and little to no meat.
Luxembourg is not a blue zone. People in a blue zone live longer.
Also, there are more things to consider besides the lengths of intestines.
Our bodies don't make vitamin C (carnivores make vitamin C).
Our bodies hold on to cholesterol (carnivores do not).

There is anecdotal evidence for almost anything.
Whole-food plant-based is backed by scientific studies on large populations (see links below).
Whole-food plant-based is not the same as Vegan.
A vegan diet deficient in whole foods is not healthy.
