To which degress could we create fullfilling artificial challenges?

I am taking the scenario that AGI or even AI replaces most jobs very seriously and look for solutions. Amish people could give great inspiration on how you can basically create a bubble which shields you from new technology and be happy living in that bubble. I imagine their life wont change much with AI. They proof that it is possible. In this documentary they deal with the question of how to integrate technology a lot which I find interesting. 

However the Amish people are very religious and not as developed. So it would beg the question of how well could a more developed person find meaning in a simpler life if they have already been on the other side for quite some time. 

Maybe society could create Amish societies 2.0 where modern technology is allowed, except AI. 

I think we can definitely find some sense of fullfillment and archievement in things like gardening, kniting, manual work, clubs ... and slowing down our way of living and spending more time on quality relationship is also a very healthy thing. That in combination with keeping AI mostly out of our personal lives could create pretty good living standards.
