What is Language?

What is language? linguists will say that the sounds or 'phonemes' that make up words are meaningless. The definition for what a word is isn't convincing to me. 

Note: There's also a theory on language (and its origin) called the ding dong theory and it's not convincing at all.

Is language metaphysical? How come humans are the only creatures that have language?
